Ingredients
Chicken broth – 4 cups
Two cups water
2 shredded chicken (cooked, boneless) breast halves
Quick cooking long grain and wild rice with seasoning packet – 1 (4.5 ounce) package
Salt – 1/2 teaspoon
Ground black pepper – 1/2 teaspoon
All-purpose flour – 3/4 cup
Butter – 1/2 cup
Heavy cream – 2 cups
Directions
On medium heat, mix chicken, broth and water in a big bowl. Let it bring to boil and then mix in rice, keeping the seasoning packet separate. Put a cover and take away from heat.
In a small bowl, combine salt, pepper and flour. Melt butter in a saucepan of medium size on medium heat. Mix in the seasoning from the packet until the whole mixture becomes bubbly. Decrease the heat and then mix in flour mixture by tablespoons, to make a concoction. Whip in cream, gradually with little amount, until it blend properly and becomes smooth. Cook for 5 minutes until the mixture thickened.
Mix the cream mixture into rice and broth. Cook the mixture on medium heat for about 10 to 15 minutes until the whole mixture is thoroughly cooked.
If you want to make it tasty, then mix in some celery, onions, broccoli and carrots with it after sautéing it with some garlic. It smells amazing. To make it healthier, you can add milk instead of cream. You can serve this soup hot with cheesy corn bread.
