Ingredients
Cubed and cooked chicken – 2 cups
One medium unpeeled and chopped red apple
Dried cranberries – 3/4 cup
Finely sliced celery – 1/2 cup
Chopped pecans – 1/4 cup
Finely sliced green onions – 2 tablespoons
Salad dressing or mayonnaise – 3/4 cup
Lime juice – 2 teaspoons
Curry powder – 1/2 teaspoon
12 slices of bread
Lettuce Leaves as required
Directions
Take a large mixing bowl and mix the vegetables like chopped red apple, dried cranberries, finely sliced celery, chopped pecans and finely sliced green onions with the cooked and cubed chicken. Mix lime juice, mayonnaise, and curry powder; add this mixture to the chicken and vegetable mixture and stir it to coat properly. Put a lid to cover the mixture and refrigerate it until chilled and ready to serve. With a 3-inch cookie cutter with heart-shape motif, cut each bread slice in that shape. On that heart shaped bread use chicken salad as toppings on the top of lettuce and serve it chilled.
You can serve this in mini-croissants. If you need, you can add a pinch of sale and pepper to taste. You can add some yogurt with the mayonnaise. You can also add ground pepper to make it tastier.
